Sweet Potato Recipes - Sweet Potato Puff

Sweet potatoes are the most nutrient dense food you can eat. This is my favorite sweet potato dessert. The great thing is that it's really healthy, especially if you choose the lower calorie options in the recipe.


2 cups Baked sweet potatoes (you can also slice and steam them instead)
1/2 cup Skim milk (or substitute 1% milk or soy milk)
1/3 cup Sugar (or substitute 1/4 cup maple syrup)
2 ea Eggs (or substitute 3 egg whites)
2 tbsp Butter (consider reducing butter to 1 teaspoon - it still tastes great)
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1/2 tsp Vanilla (optional)
1/2 tsp Grated orange rind (optional)
Crunchy Nut Topping (optional)
This topping adds a lot of calories and not a lot of nutrition. Consider using plain chopped walnuts or pecans as a topping, instead of the crunchy nut topping.
2 tbsp Melted butter
3/4 cup Corn Flakes
1/4 cup Chopped walnuts or pecans
1/4 cup Firmly packed brown sugar

Baked sweet potatoes should be nice and soft to the touch. Place unpeeled sweet potatoes in your Vita-Mix. If you don't have a Vita-Mix, you should probably peel them first and use an electric mixer to make this recipe.

Vita-Mix instructions:
Place unpeeled sweet potatoes, milk, sugar, eggs, butter, nutmeg, cinnamon, and any optional ingredients in the Vita-Mix. Use variable speed to slowly mix ingredients, using the tamper to push the ingredients into the blade. Mix at speed 6 - 7 for 30 seconds or until thoroughly mixed.

Spread mixture in greased 9-inch pie plate. Bake at 400° for 20 minute, or until set. Meanwhile, rinse Vita-Mix with a bit of dish soap and warm water.

Place all Topping ingredients into Vita-Mix and mix on low speed for 15 seconds, again pushing the ingredients with the tamper in order to mix them well. Spread Topping on hot puff. Bake 10 minutes longer.

Electric mixer instructions:

Peel cooked sweet potatoes. Place in mixer bowl and mix about 30 seconds at speed 2. Add milk, sugar, egg, butter, nutmeg, cinnamon, and any optional ingredients and mix at speed 4 for about 1 minute.

Spread mixture in greased 9-inch pie plate. Bake at 400° for 20 minute, or until set. Meanwhile, clean bowl and beater.

Place all Topping ingredients into mixer bowl. Turn to low speed and mix about 15 seconds. Spread Topping on hot puff. Bake 10 minutes longer.

Yield: 6 servings
