Sweet Potato Pie Recipe

Sweet potatoes are the most nutrient dense food you can eat. Sweet Potato Pie is an all-time favorite and this recipe is great tasting and still healthier than most recipes.


1 lb 3 oz. Baked sweet potatoes (you can also slice and steam them instead)
1 1/4 cups Plain non-fat yogurt
3/4 cup Packed dark brown sugar (or substitute 1/2 cup maple syrup)
5 ea Egg yolks (or substitute 3 whole eggs)
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1 pinch Salt
1/2 tsp Vanilla (optional)
1/2 tsp Grated orange rind (optional)
Topping (optional)
3/4 cup Toasted chopped pecans or walnuts

Baked sweet potatoes should be nice and soft to the touch. Place unpeeled sweet potatoes in your Vita-Mix. If you don't have a Vita-Mix, you should probably peel them first and use an electric mixer to make this recipe.

Vita-Mix instructions:
Place unpeeled sweet potatoes, yogurt, sugar, eggs, nutmeg, cinnamon, salt, and any optional ingredients in the Vita-Mix. Use variable speed to slowly mix ingredients, using the tamper to push the ingredients into the blade. Mix at speed 4- 5 for 30 seconds or until thoroughly mixed.

Spread mixture in greased 9-inch pie plate. Sprinkle chopped nuts on top. Bake at 350° for 50 - 55 minutes, or until set. Remove from oven and cool. Keep refrigerated after cooling.

Electric mixer instructions:
Peel cooked sweet potatoes. Place in mixer bowl and mix about 30 seconds at speed 2 or mash by hand with a potato masher. Add yogurt, sugar, egg, nutmeg, cinnamon, salt, and any optional ingredients and beat until well combined.

Spread mixture in greased 9-inch pie plate. Sprinkle chopped nuts on top. Bake at 350° for 50 - 55 minutes, or until set. Remove from oven and cool. Keep refrigerated after cooling.

Yield: 6 servings
