Baked sweet potatoes should be nice and soft to the touch. Place
unpeeled sweet potatoes in your Vita-Mix.
If you don't have a Vita-Mix, you should probably peel them first
and use an electric mixer to make this recipe.
Vita-Mix instructions:
Place unpeeled sweet potatoes, yogurt, sugar, eggs, nutmeg, cinnamon,
salt, and any optional ingredients in the Vita-Mix. Use variable
speed to slowly mix ingredients, using the tamper to push the ingredients
into the blade. Mix at speed 4- 5 for 30 seconds or until thoroughly
mixed.
Spread mixture in greased 9-inch pie plate. Sprinkle chopped nuts
on top. Bake at 350° for 50 - 55 minutes, or until set. Remove
from oven and cool. Keep refrigerated after cooling.
Electric mixer instructions:
Peel cooked sweet potatoes. Place in mixer bowl and mix about 30
seconds at speed 2 or mash by hand with a potato masher. Add yogurt,
sugar, egg, nutmeg, cinnamon, salt, and any optional ingredients
and beat until well combined.
Spread mixture in greased 9-inch pie plate. Sprinkle chopped nuts
on top. Bake at 350° for 50 - 55 minutes, or until set. Remove
